Okay so these are DELICIOUS and a must-try! Bring them to a family gathering or friend’s potluck and be prepared to be hounded for the recipe by everyone! And they are no bake and grain free!
Mini No Bake Grain Free Pumpkin Pie Bites
Pumpkin filling Ingredients:
3/4 Cup Pumpkin Puree
1/2 Cup Cashew Butter
1 Tsp Vanilla Extract
1 1/2 Tsp Cinnamon
1/4 Tsp Ginger
1/8 Tsp Cloves
3 Packets Stevia or one dropperful of liquid stevia
2 Tbsp Agave (substitute honey, maple Syrup or Stevia to make this no-sugar!)
Pinch of Salt
Pie Crust Ingredients:
1 Cup Shredded Coconut
1 1/4 Cup Pecans + Extra for Topping (or pecans AND walnuts)
1 Cup Pitted Dates
1 Tsp Vanilla Extract
Directions:
Use your food processor, blend all pie filling ingredients until smooth and scoop into separate bowl. Wash out food processor and process all crust ingredients until dough like consistency with visible chunks of nut. Grease mini muffin tins with coconut oil or other healthy oil. Using your fingers or a small cup to press crust into each mini muffin tin.
Fill each muffin tin with pie filling using a spoon or icing decorating bag (like I did!). Top each with a pecan if you like. Cover with saran wrap and freeze until solid. When you’re ready to serve, remove from the freezer, pop out pumpkin bites and thaw for at least 5 minutes. Makes approximately 18 mini bites.
Nutritional Info (per mini pie): 154 calories, 12 g fat (healthy!!), 9 g carbs, 2 g fiber, 3 g sugar, 2.5 g protein
The Mad Radish says: To “pop” the bites out of the muffin tins, push a butter knife down the side and lever them out. Even better would be to use silicone muffin molds!
The Snobby Wasabi says: At 12 mini bites a pop, you’d better double this one or you will have the party goers at each other’s throats! Btw, these don’t require you to wear your elastic pants to the party.
