Have you ever looked at the ingredients on a Larabar? I was at the grocery store yesterday and was checking out all of the protein/energy bars to get ideas. Alot of the bars out there have ingredients that most of us can’t pronounce but Larabars are incredibly simple. Too simple for them to be charging $2 per bar, that’s for sure! So I left the grocery store on a mission; to use up the remainder of my nuts, dates, etc in my pantry before I head out to the bulk food store tomorrow! Well, success was had in the Mad Radish kitchen; the bars came out delicious and tasted even better than similar Larabars I have tried. For a fraction of the cost, you too can make Larabars in your own kitchen with a few simple ingredients and a good food processor or Vitamix. This is a SUPER versatile recipe so feel free to make substitutions for what you have on hand. I always love it when I can make a new recipe without heading out to the grocery store!
Nutty Coconut Grain Free “Larabars”
1 cup pitted dates (the softer/fresher the better – especially if you don’t have a Vitamix)
3/4 cup raw walnuts
3/4 cup raw almonds
3 Tbsp natural peanut butter
3 scoops vanilla protein powder (can omit but then also omit peanut butter – and they will be stickier!)
1 cup shredded coconut
1/4 cup ground flax
Blend the dates, nuts and peanut butter in a good food processor until fairly smooth. Add remainder of ingredients and blend until it becomes dough like. Remove from food processor, place in bowl and form into a ball.
Roll onto wax paper or similar non stick surface with a rolling pin and cut out 1″x2″ bars. Use spatula to move the bars into a container, separating them with wax paper.
Refrigerate. Makes 15-18 bars.
