Salt and Pepper Ranch Zucchini Chips

Zucchini is one of my favorite vegetables!  It is not really even the taste that I love as it is their chameleon abilities.  They are good in many forms; zucchini “spaghetti”, chopped in a salad, stir fried with garlic and onion, etc.  Now, this is my latest venture; zucchini chips in a dehydrator.  Dehydrators are great for making veggie chips because they are easy to use, crisp the chips up nicer than an oven, and bring out the flavor in foods without cooking (which is great for those on a raw food diet!). I used to love Cool Ranch Doritos WAAAYY back in the day (like I am really THAT old!) so adding the flavor of ranch was an easy choice for me.  Try them; you won’t be sorry!

Salt and Pepper Ranch Zucchini Chips

2 medium zucchini, sliced super thin on a mandolin

1/2 tsp olive oil

1 tsp apple cider vinegar

Salt, to taste

Pepper, to taste

Ranch dressing powder or ranch popcorn seasoning

Slice zucchini on thinnest setting on your mandolin slicer.

Put into a medium bowl and coat in olive oil/vinegar mixture (I added SOME pepper at this point as well, as you can see).

Now, you have two choices.  You can add the seasonings to the bowl and just mix it around or you can do what I did to make them more evenly seasoned…

Lay out zucchini on each tray of dehydrator and put the tray in the sink (or on the counter but be aware it will make a mess!)

Sprinkle zucchini with seasonings (Do NOT overdo the seasonings!  They will intensify during dehydration) and put tray back onto dehydrator base.  Repeat with all trays until zucchini is used up.

Mine made about 4 1/2 trays which was perfect because my dehydrator only has 5!

135 degrees for 5 hours or so will make them super nice and crispy!

Only makes enough for 1 big or 2 small servings.  They shrink down ALOT!

Feel free to dip these yummy chips if you like!  One idea is to use the remainder of the ranch dressing powder added to greek yogurt!
