This is a staple meal in our house and I have been meaning to blog about it! It is super easy to make, very versatile, and extremely satisfying and delicious! Oh, and not to mention family friendly. My kids gobble it up!
Spicy Cauliflower Fried “Rice”
1 tbsp olive oil
5 cloves garlic, chopped
1 medium zucchini, halved and sliced
7 small mushrooms, sliced
6 small (6 inch) hot italian turkey sausages (or other meat – see note)
1 SMALL head cauliflower, grated
2 whole free run eggs
1/2 cup egg whites
1/2 tsp sea salt
pepper, to taste
1 tsp onion powder
2 tsp soy sauce
1 tsp “no salt added” vegetable seasoning
1/4 – 1/2 cup green onions, chopped
Grate cauliflower (or use food processor and pulse until it is rice sized) and set aside in a bowl. Beat eggs with egg whites, sea salt and pepper and set aside.
Heat olive oil in a large pan on medium-high heat. Add garlic and saute for one minute. Add zucchini and mushrooms and saute until soft.
Meanwhile in a separate pan, cook sausages until done. Chop or crumble sausages and add them, along with cauliflower, to the large pan. Add other seasonings and saute for approx 2 minutes. Move the mixture to one side of the pan and pour the eggs into the other side to scramble. Once scrambled, mix egg mixture into cauliflower mixture and saute an additional 2 minutes.
Remove from heat and stir in green onions (or serve with green onions to sprinkle on top). Serve immediately.
The Mad Radish says: You can use any meat you like in this recipe! Ground meat cuts prep time down significantly as well! Just remember, if you use a “non-spicy” meat, you may need to adjust the seasonings to avoid it being bland! You can also make substitutions for the vegetables you have on hand (besides the cauliflower; that is pretty important!).
