Happy Thanksgiving everyone! When most people think of thanksgiving, the first thing they think of in terms of food is TURKEY. Which is why I wanted to share a recipe that would go well with the timeless classic holiday meal! This cranberry relish also meets many people’s dietary restrictions so more people can enjoy it! It is raw (although not with turkey obviously in this case! It is great as a side dish on its own too!), grain free, vegan, sugar free, clean eating and fat free! But even with all of these restrictions it is still delicious! It goes fabulous with turkey but also serves as a great side dish for all of you vegans and raw food eaters out there! And there are not many ingredients which makes it taste simple and fresh! Not to mention the bright vibrant color it brings to the table! Try it today! You may even have all of the ingredients in your house since turkey day is upon us!
Thanksgiving Dinner Cranberry Relish
2- 12 oz bags of raw, unfrozen cranberries
2 navel oranges, peel, pith and membranes removed (or equivalent in unsweetened canned oranges, drained)
2 apples (gala or red delicious or one of each!), chopped
2 tsp orange rind
1/2 – 3/4 cup splenda (or equivalent amount of stevia for paleo diets!), to taste
1/2 tsp allspice (can sub cinnamon or cloves to taste)
Put each fruit IN BATCHES in a food processor or Vitamix and pulse until a thick salsa like consistency is reached.
Transfer to a bowl and stir in orange rind, sugar and allspice.
Let sit for at least 2 hours (or overnight is even better!) before serving if possible. Serve cold. Will last in the fridge for a few days. The Mad Radish says: I could eat the whole batch with a spoon! Delish!
