No Bake Energy Bites

IMG_1106When the kids get home from school, sometimes they are so ravenous that the grouchy monster starts coming out before I can even whip them up a snack.  So I like to keep ready made healthy snacks around that will fill them up quickly and have a few different healthy ingredients in them.  Enter energy bites.  Easy, delicious, satisfying to the sweet tooth and of course, healthy.  Enjoy!

No Bake Energy Bites 

1 cup dry oats

2/3 cup coconut (shredded, desiccated, etc) – I used unsweetened

1/2 cup natural peanut butter

1/2 cup ground flax seeds

1/3 cup agave nectar

2 Tbsp chia seeds

1 tsp vanilla

1/3 cup chocolate chips (optional)

All all ingredients to a stand mixer (or use your hands!) and mix until well incorporated. Add chocolate chips and stir by hand to distribute them.  Refrigerate the “dough” for 30 minutes, then roll into 1 inch balls.  Store in the refrigerator for up to a week.  Makes about 25 one inch balls.

Nutritional Info per ball WITH chocolate chips: 118 calories, 6.5 g fat, 13 g carbs, 4 g protein

Nutritional Info per ball WITHOUT chocolate chips: 104 calories, 5.6 g fat, 10 g carbs, 4 g protein
