Oatmeal made simple

IMG_3059-1Sunday mornings are my favourite. I wish there were more of them in the week! We usually have pancakes and eggs or egg mcmuffins made at home. But that’s not why I like them. I love that I can spend time in the kitchen with the kids without being rushed. It’s good old fashioned family time. And we don’t get enough of that once school and activities start!
Today is a little different though. We have been trying to sell our house and today we have an open house. When you cook like we cook (aka like my kids cook), it makes a giant mess. Flour on the floor, egg guts dripping down the front of the stove and milk splattered on the counter. But, they have to learn some way right? My older son, who is 11 now, can make a whole breakfast of pancakes, eggs and bacon all by himself. And his 9 year old sister loves to help me in the kitchen and do the dishes so it’s like they are a power team! Anyway, the breakfast of choice today was oatmeal due to it’s lack of mess in preparation!
Oatmeal is a wonderful way to start the day because it fills you up and warms you up after your slumber. It is quick comfort food and is loved by people of all ages. It is also high in fiber and protein and that’s just the regular plain old oats part. Top it with pretty much ANYTHING healthy and it’s power packed TNT. Delicious AND nutritious. You can turn any unhealthy craving into a healthy oatmeal dish. Craving pumpkin pie? Try pumpkin pie oatmeal. Really google can lead you to any flavour combination in oatmeal that you can imagine.
In our house, everyone likes different things on their oatmeal so I just cook up a big batch of oats in the microwave and distribute it. Then it’s “decorate your own oatmeal” for everyone. Easy, fun and everyone gets what they like so it actually gets consumed! Always a plus when kids are involved…

Today the choices were:
Mom – unsweetened vanilla almond milk, pumpkin seeds, raisins, craisins, sliced raw almonds, blueberries and raspberries (pictured above)
Dad – missed out because he’s out of town!
Jackson (11)- 2% milk, peanut butter, agave nectar, cinnamon, raisins, sliced almonds and unsweetened coconut
Avery (9)- 2% milk, cottage cheese, blueberries, raspberries and sliced raw almonds

The preparation of oatmeal is simple. Scoop whatever amount of oats you want into a microwave safe bowl. Fill with water just to the top of the oats and microwave for 2.5-3 minutes or until desired consistency is reached. I just eyeball the amount of oats but it’s about 1.5 cups for three people. Add your choice of milk and lightly stir. Add toppings!
Here are toppings that we love to use:
Sliced or slivered raw almonds
Chopped cashews
Pumpkin seeds
Sunflower seeds
Chia seeds
Ground flax
Peanut butter
Cocoa (we love Hershey’s dark chocolate cocoa)
Cottage cheese
Pure pumpkin
Fresh berries (or microwave frozen ones, then add)
Bananas, sliced
Apples, chopped
Vanilla extract
Caramel extract
Spices (cinnamon and pumpkin pie spice are our favs)
If we want to sweeten it we usually use pure maple syrup, agave nectar or stevia drops (the toffee caramel ones are the best!).
