I have actually always disliked the saying “breakfast is the most important meal of the day” because I think it gives too much emphasis on that ONE meal. EVERY meal is important and skipping any meal is not good for your health. Also, it makes some people think that as long as they have a good breakfast, they can eat garbage throughout the rest of the day.
On the other hand, breakfast is my favourite meal of the day! I think it is because breakfast is an easy meal to make healthy AND delicious.
Greek yogurt is very high in protein and berries are full of antioxidants. Homemade skillet granola is just the cherry on top. It is super easy, quick, and you can change it everyday if you want instead of making one big batch of the same stuff to eat day after day. Also, 300 calories is a great number to shoot for in your breakfast and this fits perfectly within that (see nutritional info below).
Here’s how to make my favourite breakfast.
The Skillet Granola Bowl
1/2 cup Greek yogurt
1/4 cup blueberries
1/4 cup raspberries
1/2 cup organic raw rolled oats
2 Tbsp unsweetened shredded or desiccated coconut
1 Tbsp slivered or sliced almonds
1 tsp ground flax
1 tsp chia seeds
A drizzle of agave nectar
Measure out first three ingredients into a small bowl and set aside. Add the remaining ingredients to a skillet at medium-high heat. Stir occasionally until you can smell toasted oats/nuts and the granola has browned significantly, about 5 minutes. Remove from heat and add to the yogurt and berries. Stir and eat immediately.
