Cherry Coconut Chocolate Chunk “Ice Cream”

cherry coconut chocolate chunk ice cream2Ahhh ice cream. Who in their right mind wants to give up ice cream?  I know I wasn’t willing to!  And I don’t own an ice cream maker (yet) so I had to come up with another idea to be able to enjoy my favorite dessert; guilt free.  Try it; you will love it!

Cherry Coconut Chocolate Chunk “Ice Cream”

1/2 cup fat free plain greek yogurt (it doesn’t have to be fat free; that is just what I had on hand)

6 frozen cherries (Costco!) or other berry of choice

1 Tbsp unsweetened shredded coconut

10 chocolate chips

Stevia or sweetener of choice, to taste

Blend well in a small food processor.  Freeze until semi-solid, stirring every 10 minutes or so. Serve!

The Mad Radish says: Make a larger batch, keep frozen and just let it thaw to scoop!

The Snobby Wasabi says: Hmmm healthy ice cream hey? Sounds a little fishy…

  1. Just made this, it’s super good. I didn’t put any chocolate chips or coconut in it though. It tastes really fruity. 🙂
