I know, I know, it all sounded good until the “hummus” part right? WRONG. Who doesn’t like licking the beaters after making cookies? Even better, who doesn’t like eating the batter with a spoon? But all of those raw eggs and sugar and butter…the list goes on and on.
Okay so here is the solution; HEALTHY cookie dough. That’s right. Healthy. And it still tastes sinful and decadent! This is impossible you say?! Well try the recipe below and I will make a believer out of you!
Chocolate Chip Cookie Dough Hummus
1.5 cups chickpeas
1/4 cup cashew/almond/peanut butter
1/4 cup unsweetened almond milk
1/4 cup agave (or honey)
2 packets Truvia sweetener
1/4 cup ground flax
1 tbsp vanilla extract
Dash of salt
1/8 tsp baking soda
1/3-1/2 cup chocolate chips
Place all ingredients in food processor except chocolate chips. Blend until perfectly smooth. Scoop into bowl and stir in chocolate chips.
Feel free to add other things to change it up like mixed nuts, dried fruit or cocoa. Makes lots.

The Mad Radish says: You can use it as dip for other things too or spread it on top of bars or brownies. I just like to eat it as is. It freezes well too and you can eat it half frozen; yummy!
