Taco Salad is such an easy dinner to make with the foods you would normally find in your kitchen and spice cupboard. No pre-planning required because you can just use what you have! Try this recipe that takes the traditional taco salad and turns it healthy and full of nutritional goodness! Plus, it is VERY kid-approved in our house!
Clean Eating Taco Salad
1 lb Ground chicken
1/4 cup water
Avocado Lime Dressing:
1 medium avocado
Juice of 1 lime
1/4 cup plain 2% greek yogurt
Green leaf lettuce
Green Pepper, chopped
Red Onion, chopped
Low fat or soy cheese
Cherry tomatoes or chopped tomatoes
Salsa (if desired – we didn’t find it needed it!)
Something grain free and crunchy! Try my salt and pepper ranch zucchini chips
In a medium pan, cook ground chicken until there is no pink remaining. Add the taco seasoning, mix well, then add 1/4 cup water and bring to a boil. Reduce heat and simmer until water evaporates, approx 5 minutes.
Meanwhile, add dressing ingredients to a food processor (small ones work best for a small amount of ingredients!) and blend until smooth. It will be very thick so you will need to spoon it into the salad.
Now just build your salad to suit your taste and mix well! Enjoy!
