Another grain free bread! Banana bread not only is one of my favorites, but it also makes my house smell divine! And who doesn’t have a few overripe bananas kicking around that we would hate to waste by throwing them out!
Grain free pumpkin spice bread
1/2 cup + 2 Tbsp coconut flour
1 tsp baking soda
1 heaping tsp cinnamon
1/2 tsp ground cloves
1/2 tsp nutmeg
2.5 scoops whey protein powder
1.5 cups liquid egg whites
1 cup mashed banana (~2 large bananas)
Beat egg whites 4-5 minutes. In separate bowl, beat rest of ingredients and then beat into the egg whites.
Grease loaf pan with coconut oil and line bottom with parchment paper. Bake at 350 for 35 minutes. Remove and cover with foil. Bake additional 15 minutes. Cool and slice.
