Grain Free Pumpkin Spice Bread

grain free pumpkin spice bread2When I decided to stop eating grains, I was just not ready to give up bread!  This is more of a loaf but it toasts beautifully and can be spread with whatever you like!  Peanut butter and jam, strawberry cream cheese, plain old butter (if you eat butter!); the possibilities are endless!  Try it and you may decide that grain free living is not as tortuous as it sounds!

Grain Free Pumpkin Spice Bread

1/2 cup + 2 Tbsp coconut flour
1 tsp baking soda
1 heaping tsp pumpkin pie spice
1 tsp cinnamon
2.5 scoops whey protein powder
1.5 cups liquid egg whites
1 cup pumpkin
Beat egg whites in a large bowl 4-5 minutes. In separate bowl beat rest of ingredients and then beat into the egg whites.
Grease loaf pan with coconut oil and line bottom with parchment paper. Bake at 350 for 30 minutes. Remove and cover with foil. Bake additional 20 minutes. Cool and slice. Makes about 12-14 slices.

Nutritional Info (per slice): 60 calories, 1 g fat, 6 g carbs, 2 g fiber, 3 g sugar, 7.5 g protein

The Mad Radish says: Since I only eat this one slice at a time and am the only one in the house who eats it, I freeze each slice individually to keep it fresh and then toast it right from frozen or let it thaw first!

The Snobby Wasabi says:  I don’t know about this…  I am going to call this the “no bread” bread.  It’s like capri pants; the “no pants” pants.
