Ooey Gooey Grain Free White Bean Blondies

IMG_0290 Healthy eating does not have to be a situation of deprivation and despair!  Cue in white bean blondies.  These little devils are not as sinful as they look; in fact they give you a nice helping of omega 3’s as well as fiber and protein to boot!  But that is not my sales pitch… Kids and adults alike will rave about the ooey gooey texture and the sweet taste of chocolate and peanut butter.  Now, if you are not sold on these yet, just try them once and you will be hooked!

Ooey Gooey Grain Free White Bean Blondies

1.5 cups white beans or chickpeas
3/4 tsp baking powder
1/8 tsp baking soda
1/4 tsp salt
1/2 cup coconut palm sugar
1/4 cup Truvia baking blend (stevia)
2 tsp pure vanilla extract
1/4 cup ground flax (or oats if you are not worried about it being grain free!)
1/4 cup peanut butter (can sub applesauce or other fat source but they won’t be as yummy!)
1/2 cup chocolate chips

Preheat oven to 350 degrees.
Blend all ingredients in food processor until very smooth. Pulse or mix in chocolate chips. Scoop into greased (use coconut oil for added health benefits!) 8×8 pan.
Bake at 350 for 25-30 minutes. They will be super soft at first but will firm up as they cool. Makes 16 blondies!

The Mad Radish says:  These freeze well!! Store in individual freezer ziplocs to easily pop into lunches, etc. Oh and kids love these. Just don’t tell them what they are made with! 🙂
