Pumpkin Cashew Dip

pumpkin cashew dipI know, I know… Pumpkin again!  My friend Karen from work gave me a similar recipe and I have been waiting to try it.  However, hers called for tofu and we were fresh out, so I had to improvise. We have been loving pumpkin this week in our house; partly because once we open a big can of it, we might as well use it up quickly!  I was planning to make this tonight to put in the fridge for tomorrow but my kids came in after playing soccer in the backyard after supper and they were already hungry again!  This is a great recipe for kids to help with because it is so easy and the ingredients aren’t messy. Since mine are older and help in the kitchen often, I let them go to town and they had it ready in less than 10 minutes. Younger children can dump the ingredients into the food processor and they usually love to push the pulse button!  Enjoy a taste of pumpkin pie without the guilt!

Pumpkin Cashew Dip

1/2 cup raw, unsalted cashews, soaked

8 large dates, soaked

3/4 cup pumpkin puree

2 tsp pumpkin pie spice (or more, to taste!)

1 Tbsp Agave nectar

1/8 tsp sea salt

1/8-1/4 cup almond milk

Soak cashews for at least 5 hours (or overnight). Soak dates for one hour.  Drain both cashews and dates and add to food processor or Vitamix blender.  Blend for a little while until they break down, then add all other ingredients EXCEPT almond milk.  Blend until fairly smooth then slowly add almond milk until desired consistency is reached. If required, add more pumpkin pie spice if you want to spicier.  If you want it sweeter, try adding more dates or agave.  Makes about 2 cups.

NOTE: Use this as a dip for graham crackers (if you eat them; we don’t) or tart apples, as a spread for homemade breads (try this on my Grain Free Pumpkin Spice Bread!) or just eat it with a big spoon like my kids did!  The possibilities are endless and delicious. Enjoy!

The Mad Radish says:  Soaking the cashews is required in order to get the smooth texture.  If you have a Vitamix (which I don’t… yet!), this will turn out EVEN better because it was blend that much smoother!

The Snobby Wasabi says:  I usually need to triple this recipe when I take it to the many parties I am invited to.  Oh, and I DO have a Vitamix, of COURSE.
