Southwest BBQ Chicken Stir Fry
1 tsp olive oil
3 cloves garlic, sliced thin
1/4 yellow onion, chopped
1 medium chicken breast, chopped into bite sized pieces (or use leftover rotisserie chicken!)
3/4 medium zucchini, chopped in thick bite sized pieces
5 large mushrooms, quartered
1/2 tsp Mrs. Dash “no salt” southwest chipotle seasoning (or any other spicy seasoning mix!)
1/4 tsp sea salt
1 Tbsp low calorie/low carb gluten free BBQ sauce
Heat olive oil in skillet on medium heat; add onions and garlic and saute until onions are transparent. Add chicken, sprinkle with sea salt and cook until there is no more pink on the OUTSIDES. Add vegetables, Mrs. Dash and BBQ sauce and saute until soft, approx 5-8 minutes. Serves 1.
