Southwest BBQ Chicken Stir Fry

southwest bbq chicken stir fryHere is a quick and easy spicy stir fry to make when you are in a rush but want something healthy and full of veggies!

Southwest BBQ Chicken Stir Fry

1 tsp olive oil

3 cloves garlic, sliced thin

1/4 yellow onion, chopped

1 medium chicken breast, chopped into bite sized pieces (or use leftover rotisserie chicken!)

3/4 medium zucchini, chopped in thick bite sized pieces

5 large mushrooms, quartered

1/2 tsp Mrs. Dash “no salt” southwest chipotle seasoning (or any other spicy seasoning mix!)

1/4 tsp sea salt

1 Tbsp low calorie/low carb gluten free BBQ sauce

Heat olive oil in skillet on medium heat; add onions and garlic and saute until onions are transparent.  Add chicken, sprinkle with sea salt and cook until there is no more pink on the OUTSIDES.  Add vegetables, Mrs. Dash and BBQ sauce and saute until soft, approx 5-8 minutes.  Serves 1.

The Mad Radish says:  This makes excellent leftovers once the flavors have more time to meld together in the fridge so double the recipe even if it’s just you!

The Snobby Wasabi says:  This Mrs. Dash… I wouldn’t mind meeting her.  Any woman who makes a spice like this deserves a man like me!
