My daughter has been begging me to make ice cream since we bought our ice cream maker a week ago so I got it out after dinner today and told her I would make her some of her favorite; strawberry. Well, maybe I should have read the instructions first that say to freeze the base for a day first… Oops. Since she had her hopes up for homemade ice cream, I decided to experiment and let’s just say she wore that strawberry mustache with pride!
Strawberry Ice Cream
2 overflowing cups frozen strawberries
1/2 block of cream cheese (4 oz) – I used low fat but you could use regular or fat free; I don’t think it would make much difference
1 tsp vanilla
1/2-1 dropper of liquid stevia (I used vanilla cream flavor) or sweetener of choice, to taste
1 cup plain 2% greek yogurt
Place all ingredients in Vitamix and blend. Or, if you do not have a Vitamix, place all ingredients EXCEPT frozen strawberries into a food processor, blend and then add berries in 3 batches and PULSE until smooth before adding the next batch. Once most of them are broken down, you can set it to go on its own until perfectly smooth. Serve immediately (it will be the consistency of soft serve) or freeze until desired consistency (consistency in the photo is after one hour in the freezer). Makes 3 big servings.
